At Gillis, we take pride in offering classic steak cuts, such as ribeye and tenderloin, alongside lesser-known but equally delicious parts of the animal, like neck, tongue, brisket, and tail. This approach lets us serve unique, flavorful dishes that provide a truly exceptional meat restaurant experience.

Master Butchery: Expertly Crafted Steaks and More
Our meat is delivered fresh and processed entirely in-house by Bram, the owner, butcher, and chef at Gillis. With years of experience and a passion for his craft, Bram hand-selects and ages every piece of meat to create the perfect steak or cut. From tender steaks to flavorful roasts, each dish reflects the care and attention to detail that you’d expect from a top-tier steak restaurant.
We also make use of bones and fats, which many others would discard. The bones are used to create rich, flavorful broths and stocks, the foundation for the delicious sauces that accompany many of our dishes. The fat is repurposed to tallow-age certain cuts, giving them an extra depth of flavor and making every bite a unique culinary experience.
